This tasty gluten-free cake is made with honey and extra virgin olive oil, and it is so simple to create that you just need two bowls and a fork instead of a mixer to make it.
You’ll need:
250g gluten-free flour
1 teaspoon baking powder
1 teaspoon of baking soda
1 teaspoon of salt The Solids
1 tbsp dried oregano
100g green olives in rings
100g coarsely grated feta cheese
200g Greek yogurt
3 eggs
1/2 cup extra virgin olive oil The Liquids
juice of an orange
1 tbsp thyme honey
Preheat the oven to 150°C.
Combine all the liquid ingredients in one dish and all the solid ingredients in another. Pour the solid components into the liquids and stir gently until you have a homogenous mixture. Transfer to a long, thin cake form prepared with baking paper, and bake for 60 minutes at 150 degrees Celsius.
Extra tip
Serve your cake drizzled with infused olive oils.
